Ingredients (Serves 2)
1. Mushroom - 250 g, sliced
2. Potato - 2 small, cubed
3. Onion- 1 small, thinly sliced
Ginger - 1.5 tsp, chopped
Garlic - 1.5 tsp, chopped
Green chilli - 1, slit
Curry leaves - a few
4. Tomato - 1 small, chopped
5. Turmeric powder - 1/4 tsp
Chilly powder - 1/2 - 3/4 tsp
Coriander powder - 1.5 tsp
Gram masala powder - 3/4 tsp
6. Water - 1/2 cup
7. Cilantro - 1 tbsp, to garnish
8. Salt - To taste
9. Oil - 2 - 3 tsp
Method
Heat oil in a deep pan / pressure cooker. Add chopped ginger, garlic, green chilly, curry leaves and sliced onions. Saute until oil starts appearing. Add turmeric powder, chilly powder, coriander powder and garam masala powder. Saute for a few seconds and add chopped tomato. When the tomato gets mashed up, add in the mushrooms and potato. Mix well and stir for a minute. Add 1/2 cup water. Cook until the veggies are done or for 1 whistle if you are using a pressure cooker. Open the lid. Garnish with cilantro. Serve hot with chapatis.
Tips
You can add 1/4 cup coconut milk for an extra taste.
