Ingredients (Serves 2 - 3)
1. Fish fillet - 1 medium - sized or about 250 gm ( I used salmon)
2. Pepper powder - 1/4 - 1/2 tsp
Lemon juice - 2 tsp
Dried or fresh herbs - I used 1/4 tsp each of dried parsley, dill weed and basil
Minced garlic - 1/2 tsp
Garlic salt or regular salt - To taste
Olive oil - 2 tsp
Cut the fish into small cubes. Marinate with the ingredients numbered 2 for 30 mts.
3. Veggies - 1/2 a medium-sized bell pepper, diced
1 small firm tomato, diced
6 - 8 button mushrooms, halved
Big onion - 1/4 medium-sized, diced
4. Pepper powder - 1/4 tsp
Lemon juice - 2 tsp
Dried or fresh herbs - 1/4 tsp each of parsley, rosemary and thyme
Garlic salt or regular salt - To taste
Olive oil - 2 tsp
Combine the veggies with ingredients numbered 4. Set aside.
Method
1. Soak the bamboo skewers in water for at least 30 mts before using .
2. Preheat the oven to 350 F. Thread the fish pieces alternatively with the veggies on 5 skewers. Place them on a baking sheet lined with foil.
3. Bake for 15 - 20 mts until the fish is all done and juicy inside. It is not necessary to turn the skewers. Garnish with lemon wedges and serve immediately.
