Ingredients (Makes 8 - 10)
- Dates - 3/4 cup, pitted
- Weak black tea - 1/2 cup
- Granola - 2 1/2 cups
- Butter - 1/2 cup, melted ( I used 1/4 cup + 2 tbsp)
- Apple - 1, grated
Method
1. Place the dates in a bowl, pour over the tea and allow to soak for 30 minutes.
2. Line a shallow 9 inch square pan (I used an 8 inch square pan) with non-stick parchment paper.
3. Mix together the granola and butter in a bowl, then add the apple. When the dates are softened, puree them with a blender or mash them with a potato masher. Stir the dates into the granola mix. Spoon into the prepared pan and smooth over the top lightly. Bake in a preheated oven, 350 F for 40 minutes until just cooked but still moist. Allow to cool and cut into 8 - 10 slices. Store in an airtight container for up to 3 days or 5 days in a refrigerator.
